We got the call last week. The Casting Director from the show telling us that she found us online and that she would like us to submit an audition video. After I took a long deep breath, I promised to put together a video in 4 days and have it uploaded to YouTube for her to review with the Executive Producers. It was a bit stressful, but so much fun! Thanks to everyone who helped in such a short amount of time!

We'll keep you posted on the results, but here's the video. Fingers crossed!! We hope you like it! :-))

We're Making Our TV Debut!

Rose Ott, of Rose Ott Interior Design Corporation has been a great customer of ours over the past year. So when Rose told us about her upcoming feature on NBC's 'Open House NYC To The Rescue' and asked us to make cupcakes for the George (the host) and the crew, we were really excited!

On top of that, the renovation was of Barbara Adler's home office. If you don't know Barbara yet, she is the 'Dance Captain' of the "MOMZ-N-DA HOOD" dance crew! You HAVE to check out their site at www.momzndahood.com. What a fun idea!

As the sun set in beautiful Montauk today, Kelly and Justin became man and wife. The room was dripping in orchids, fall branches, and dangling votive candlelight. This custom cupcake tower served 140 guests and was adorned with fresh orchids and hydrangea to compliment the entire motif. It was one of the most beautifully decorated wedding receptions we have ever been lucky enough to see. :-)

This place is beyond beautiful and I imagine that the weddings that are held there are truly the definition of 'fairy tale'. We were surrounded by the very best wedding vendors on Long Island. The flower displays were exceptional. Favors, make-up, registries, photographers, gowns, invitations, etc. The whole night made me want to plan my wedding all over again...with a MUCH bigger budget. :-)

Tell us about some of your specialties.
Creating custom cupcake towers that make any event 'one-of-a-kind' is our specialty. Matching colors, designs, flavors or themes with the vision our clients have for their event is what we do best. We also specialize in creating custom themed cupcake designs for birthdays, children's parties and corporate events.

Tell us how wedding cakes and cakes for wedding related occasions have changed over the years.
Cake designers are getting more creative and modern in their designs. Traditional white wedding cakes have gotten a modern makeover with bold color, texture, asymmetrical shapes, personalized themes and unique flavors. There is a trend towards being very unique, many brides are no longer limiting themselves to tradition. Our cupcake towers are so eye catching that brides love to have them in place of the traditional wedding cake, or in some cases in addition to the cake.

Tell us about some of the trends that you’ve seen in the past season or two, and about trends for the upcoming season.
Television shows like 'Ace of Cakes' and 'Food Network Challenge' have really put the spotlight on creating outrageous, personalized cake designs that tell a couple's story and reflect their unique style. Couples are looking to break the mold and are more adventurous than ever with their wedding cake design. One of the most unique and customizable choices is the cupcake tower. The popularity of cupcakes towers for weddings has grown because of the fun, whimsical nature of them, the outrageous presentation they make and most importantly that they are a wonderfully economical choice. A traditional wedding cake can run the gamut from $5 to even $15 per slice compared to a cupcake at $2.50-$4 each depending on the intricacy of the design. Add fresh flowers, an elegant tiered display and the most sophisticated version of the classic cupcake, and you have a fantastic cost-conscious centerpiece for your wedding that will really impress your guests.

Tell us about what’s in, what’s out, what’s hot and what’s not.
All-natural cupcakes made with the finest ingredients are in! Cupcakes use only a small handful of ingredients, so if they are not made with the very best available, the quality is sure to suffer. More interesting and sophisticated flavor combinations are in too. Green tea, key lime, chai latte and bacon (yes, bacon) are some of the trendiest flavors in cupcakes right now.

Frostings made with shortening, chemical stabilizers, cake mixes or anything unnatural are out! Think of the cupcakes that are stacked on tables at the supermarket. These additives extend the shelf-life of cupcakes and are less expensive to use, but are far inferior in flavor and mouthfeel. A great cupcake should melt away in your mouth quickly and leave you wanting another bite.

Mini cupcakes are also a really big trend right now. With only two-bites, these allow you to try different flavors at a party. We offer them in all flavors. I love to pass them like hors d'ouvres after the meal with shot glasses filled with ice cold milk or cordials. A really unique way to keep cupcakes elegant and fun while adding originality to your event.

What types of unique or specialty flavours of cupcakes do you offer?
Our mission at Cupcakes Catering is to elevate the classics as well as offering many unique and interesting flavors. Our vanilla bean cupcakes are made with Madagascar Bourbon Vanilla, the very best in the world. Our decadent Devil's Food cupcakes are made with the finest Belgium chocolate and a rich ganache frosting. A nod to the classic cookies and candies are really popular as well. Oreo, Snickers, Whopper, and Reese's Peanut Butter Cup are some of my favorites. Other flavors we currently offer are raspberries and cream, strawberries and cream, lemonade, southern red velvet, chocolate hazelnut, and key lime. A big part of what we love to do is experiment with new flavors, so stay tuned for many more to come.

What types of unique or specialty filings do you offer?
We currently offer Caramel, Marshmallow, Raspberry, Strawberry, Peanut Butter, Hazelnut, Lemon and Lime.

What types of unique or specialty icings do you offer?
In a wide range of flavors, we offer classic buttercream, french buttercream, silky cream cheese frosting, and chocolate ganache.

Tell us about the hottest trend in icings this season.
The hottest trend in frosting for cupcakes has got to be the wild and wacky flavor combos that everyone is experimenting with. Chocolate peanut butter cupcakes with bacon cream cheese frosting was just about the wildest one I've seen. All of the fundamentals of cooking stem from balancing flavors, so if you think of it from that point of view; salty, smoky bacon balancing sweet creamy frosting actually sounds pretty good! I haven't tried it yet, but I certainly plan to! Pairing sea salt and rich chocolate has become a big trend too for exactly the same reason.

Tell us about the fabulous cupcake embellishments that are being most requested.
Fondant flowers, silver dragees (small candy beads), sea shells, and simple shapes are most requested for wedding towers. Less is more for an elegant wedding tower display. Adding a beautiful linen, flowers, grass, sand or other organic embellishments around the tower adds to the impact and presentation as well.

Are custom cupcakes available or do your customers have to pick from one of your designs?
Custom cupcakes are what we do best and we will do everything possible to accommodate our customer’s vision for their day.

How far in advance should a couple or customer book a consultation with you?
At least 2 months in advance is recommended for wedding towers. For other event’s I recommend as far in advance as possible, however we are often able to prepare an order with less notice when required. Please do not hesitate to contact us if a short notice order needs to be placed.

How far in advance should an order be placed?
We recommend reserving a date as far in advance as possible. Once the date is reserved, the finer details should be worked on a couple of months before the wedding.

Please explain the difference between butter cream and fondant and what each is best suited to other than personal preference.
Buttercream is a butter-based icing used to pipe swirls, flowers, and designs on cakes and is most traditionally used as cupcake frosting. There are many variations of it, but they all yield a creamy, smooth and spreadable result. Fondant is a sugar-based paste with a clay-like consistency which can be molded onto cakes or cupcakes to create a very finished, smooth appearance that so many people love. Fondant is very temperamental and difficult to work with which is why it's usually a more expensive option.

Tell us about some of the most unique creations you’ve baked/designed.
We love to design with different flowers, children's characters, cartoons, party themes and color. The most unique cupcakes we've made so far would probably be our beach themed cupcakes for a teenager's birthday party. We used fondant to create colorful surfboards, crushed graham crackers for sand and bright blue vanilla frosting with sparkly sanding sugar for the wavy ocean. They were so much fun to make!

Other than the wedding couple, where do you draw your creative inspiration from?
Other than the personality of each couple, we draw inspiration from the wedding venue, the color scheme, current wedding trends, the time of year, and the many incredible new ingredients and flavors available on the market today.

Tell us about some of the latest trends also in cake toppers and where a bride and groom would find one to suit the cake and their taste.
The latest trend to top your cupcake tower is fresh flowers. A small, tightly-arranged bouquet adds height, visual interest and sophistication to a tower. A six inch cake can also be placed on top of a cupcake tower, so the couple has something to cut into for the traditional cake-cutting ceremony.

Would you recommend certain types of confections for the various seasons or is it strictly preference.
Like any other confection made with sugar and butter, temperature and humidity play a role in how to display a cupcake tower. On a hot, humid day, both need to be kept in a cool, indoor or shaded location until the cake is ready to be presented. Meringue-based buttercreams (with whipped egg whites) are more stable and might be a better solution for a summer affair.

What advice would you give couples when they’re looking to order a cupcake tower and what are some of the dos and don’ts.
The cupcake tower or cake at your wedding should embellish the day and reflect your style as a couple. Just like the invitations, it helps set the tone for the type of wedding your going to have. Is your vision a casually chic affair, a modern version or something more traditional? Your wedding cake should be the final chapter in the story of the day and it should be something that makes you feel as though it really highlights the event. Don't over think it, don't order flavors that don't appeal to a large group, and don't wait too long to reserve your date. DO include your fiancée in the planning, do taste the cake from the designer you choose, do keep it elegant and FUN (it is CAKE after all), but most importantly, do enjoy every minute of your planning because it really does go by so fast!

What sort of items do you offer that can be given away as a favour or as part of a favour.
When I got married last year, favors were a big source of frustration in my planning. I found that there were a lot of things to choose from, but I really wanted something elegant that would not be left on the table at the end of the night. Unfortunately, many of the favors that I felt were worth keeping were very expensive and the thought of spending less on things that I knew would end up in the garbage or in a drawer somewhere seemed like a waste. Because of my own experience, one of the first items we made available at Cupcakes Catering were elegant wedding favors that were affordable and would definitely not be left behind. Any of our cupcake designs can be used as favors and the finishing touches on the boxes can be customized with monogrammed labels, ribbons, fresh flowers, etc. Totally customizable, totally elegant. The simplicity of the white window boxes stacked perfectly on a table as guests exit, is a unique favor that your guests will love...not to mention a delicious late night snack!

Last but not least, do you offer any type of organic or “all-natural” sweets, cupcakes or confections
All of our core ingredients are natural, organic where possible and the very best available. We use local ingredients whenever we can to ensure freshness. As a Long Island based business we also feel that supporting vendors close to home is very important to our local economy and choose our suppliers here whenever we can.

I've been really busy this past week and haven't gotten the chance to post this. Reilly's Christening was last Sunday, 4/19. We had a small luncheon for her at a local restaurant in East Islip. Upon a few recommendations that I read on this board, I decided to check out Cupcakes Catering. I am so glad that I did!! I emailed Cupcakes Catering regarding Batman cupcakes for my son's 4th birthday. Lauren was most accommodating and an absolute pleasure to work with. Onr the agreed upon date she promptly delivered 2 dozen chocolate cupcakes with chocolate icing (as per the birthday boy!) with the Batman symbol on them in fondant. Not only were the cupcakes a gorgeous work of art, they were fantastically delicious as well. I highly recommend Cupcakes Catering and will no doubt use them again!

Cupcakes Takes The Cake is undoubtably the king of all cupcake websites/blogs, so we we thrilled to receive a 'spotlight' feature on their site. Rachel, Nichelle and Stacie spend countless hours searching the WORLD for everything related to cupcakes. It's a fun blog to follow for the outrageous artistry, wacky designs and fantastic creativity in the world-wide cupcake community.

Last night was the annual meeting of the LIWeddings/LIFamilies family of vendors. What a great event! Your perspective of the vendors and people behind the scenes really changes when you have a chance to meet everyone in person. Putting a face to all of the logos, banners and blogs that you read on the sites was fascinating and so were all of the people I met!
I sat next to Kim from "Slumber Parties By Kim" (www.slumberpartiesbykimp.com) and when I realized who who was, I couldn't help but giggle because I think what she does is SO much fun for a lady's night out! If you don't know what I mean, check out her website.
We are truly lucky to have such a wonderful community of Long Island vendors for planning either the wedding of our dreams or just about anything we might need for our families.
Thanks again to the wonderful 'behind the scenes' team at LIW/LIF. Your passion, expertise and generosity has been instrumental in all of our businesses.

Our new LOGO Cupcakes...

Yesterday was the LI Press event honoring a small handful of women on Long Island that have made an impact on our local business community. A great place to meet some really interesting Long Islanders.

I walked around the event to visit the different sponsors, and stopped at a particular company's table that sells promotional items with company logos on them. The usual stuff ...pens, hats, water bottles, little rubber balls; everything you'd expect to be handed out at a big trade show.

I was interested in it because we just launched our new LOGO CUPCAKES at Cupcakes Catering, and this was our competition!

So, I ask you...the next time you'd like to promote your business or show a client some warm appreciation...freshly baked cupcakes with creamy icing OR a plastic envelope opener?
